Birthday Cupcakes

Snack:

Larabar[Chocolate Coconut Chew]. It was ok, but the unsweetened chocolate makes it a little bitter. I love sweetening things with dates, but these just don’t really cut it for me.

Dinner:

Another 700 calorie burning ride home and I was ready to make dinner.

I browned some polenta in a skillet and topped it with a couple slices of smoked sausage and the pasta sauce we made last night, sprinkled a little parmesan cheese on top and a basil leaf garnish to top it off. I served this with some roasted red potatoes, carrots, onions, and portabella mushrooms. Plus a glass of sugar free peach drink mix to wash it all down. Not bad for what I estimate to be roughly 500 calories or less.

Of course, I couldn’t help eating a couple of roasted veggie pieces dipped in the pasta sauce as I cooked. :)

After the dishes were all cleaned up, I just had to have one of these delicious cupcakes leftover from my Birthday on Monday.

I know they are just the mix kind, but I really love white cake and frosting!
