Double the fun

I saw probably a dozen deer off in the fields on my way home from class last night. I tried to stop and take a picture of them, but they didn’t think that was such a good idea and ran away.

Breakfast

I was running a little behind this morning and threw a serving of quick-cook oats in a Tupperware container with a sliced banana, a small handful of raisins. I noticed I had one more cupcake (unfrosted) left and wondered how it might taste as a topping in my oatmeal, so I crumbled that in as well. Eh, it was alright, but definitely not worth the extra calories. It added a nice sweet, vanilla flavor, but I could have just put a tsp of vanilla extract in it to get that.

I cooked it at work, and realized how HUGE the bowl was. The container said one serving is 1/2 cup of uncooked oats. I thought that sounded like a lot, but 1/2 cup of uncooked is just 150 calories, so I went with it. That picture was only half of the monster I had in my Tupperware container! I was actually full after just the half serving, so I didn’t eat any more.

Lunch

One thing I am extremely OCD about is trying to keep from wasting any food. So, instead of pulling out my lunch that I had packed, I warmed up the rest of my oatmeal and had that for lunch.

Finally, a little after 2:00, I did get hungry again and ate part of my lunch.

Basically, it is the same as Monday night’s meal, but with macaroni instead of sourdough bread. I followed the directions on the box to make two servings of macaroni, which actually is quite a bit of pasta. I mixed the macaroni with the pasta sauce, topped with grilled veggies, and baked it in the oven. My serving was 1/4 of the total.

Snack

Tonight is grass mowing night, and that will probably be my workout (it’s a pretty big yard, and I don’t use a riding mower). I’m getting ready to start, so I ate the other part of my lunch to tide me over until a late dinner.

We have been feverishly trying to keep up with our gigantic cucumber crop from the garden, so I made a simple cucumber salad.
