Breakfast:
Today started out great with an Oatmeal Pancake!

This was my first attempt with these, and I must say… I like it! I topped it with a smashed banana and a light drizzle of reduced calorie syrup. Add a couple of fresh cherries and a small glass of milk and it becomes the perfect start for the day.
Exercise:
I rode my bike in to work today. It’s just over 8 miles, and my heart-rate monitor says I burned about 675 calories. I know that sounds high, but there are some really big hills, so it actually is a pretty good workout.
To tide me over until lunch, I cut up a carrot and ate that with a Tbsp of PB.
Lunch:
It’s a simple salad and sandwich day today. I packed a salad made with
- romaine
- green pepper
- a handful of raisins
- half a cucumber
- shredded carrot and…
- Jalapeños!
Unfortunately, I forgot to grab dressing or anything to top it with. It’s ok, the sandwich makes up for it. I had a leftover pretzel bun with some ham. If you haven’t ever tasted pretzel buns, I definitely recommend them. They can be a little high in calories, so be careful from that perspective, but wow do they taste good. Didn’t even need any cheese or other toppings to go with it.
I’m really looking forward to dinner. We grabbed some tomatoes from the garden last night and simmered them for about an hour and a half to make a fresh homemade pasta sauce.
