Cucumber Salad

This is a great summertime dish that is super easy to prepare. As an added bonus, it is about as inexpensive of a side dish as you can possibly create, so it’s a good money-saver.

This is a no-quantity recipe. I know that makes it hard to reproduce exactly, but everything is dependent on all other ingredients.

Cucumber Salad

  • Cucumbers, thinly sliced
  • Onion, thinly sliced
  • white vinegar
  • water
  • Sugar
  • Salt
  • Pepper

Basically, you want to have enough liquid to cover the cucumbers and onions. So, the amount of each is based on the number of cucumbers and onions you cut, and the size of the bowl you use to store them. The amounts of white vinegar and water should be approximately 3:4, respectively. Add the sugar a couple of Tbsps at a time, stirring well and tasting after each addition. The amount of sugar added is completely up to you on how sweet you want the cucumbers. If you add enough sugar that it doesn’t mix well, you can heat the mixture in the microwave and stir until the sugar dissolves. Combine all ingredients, cover, and store in the refrigerator for at least an hour, but preferably more.

    Yeah, it is a pretty common recipe, but a lot of people I know hadn’t made it before. I thought it might come in handy if there are any other people like me right now who have gardens that are producing more cucumbers than they possibly know what to do.

    I had a similar cucumber problem this summer, which I solved with fresh blueberries and rice wine vinegar. Talk about fresh-tasting and delicious, and after a bit of refrigeration, the salad gets even tastier! The cool, thin cucumbers tossed with the cool blueberries and rice vinegar…please excuse me while I black out with memories of joy.

    This has always beeen a summertime favorite as well… One variation that we do sometimes when we have an abundance of tomatoes is to chop them up and throw them in as well. It adds a nice flavor if you’re looking for a little different taste =)
