Loved the orzo mixture, especially how creamy the orzo gets, I even used skim milk. However, I wasn't too excited about the texture of the acorn squash.. never had it before, I don't think I care for it this way. I will give it another try though! Overall, great recipe! will use the orzo mixture for stuffing other squashes or maybe eggplant. I tried this recipe today.
