Peanut Butter and Banana Oatmeal Bars

I don’t know about you, but to me the combination of peanut butter and banana is about as perfect as things can get. Add oatmeal into that mixture, and you get something that I could eat every single day. That is what I was hoping to achieve with these bars. This was actually a new recipe that I was sort of making up as I went along. I generally knew what I wanted it to end up tasting like, and tried to create the recipe accordingly. They tasted really good, but were difficult to cut and serve. Actually, I was hoping an experienced baker might leave a comment providing recommendations on ways I can work to perfect the bars. *hint, hint*

Peanut Butter and Banana
Oatmeal Bars

INGREDIENTS

  • 1 cup flour
  • 3 cups oats, divided
  • 1 cup packed brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 stick butter, softened
  • 1 can sweetened condensed milk (I used fat free)
  • 3/4 cup peanut butter
  • 1 1/2 ripe bananas

METHOD
1. Combine the flour, 2 cups of oats, brown sugar, baking soda, salt, and butter and mix at a low speed until crumbly. Reserve 2 1/2 cups of the mixture in a bowl for later. This will be used for the topping.

2. Add the can of sweetened condensed milk to the original mixture and mix until well combined. Pour into a well greased 9″x13″ pan and bake at 350° for about 15 min.

3. While the crust is baking, slice the bananas into a mixing bowl and combine with the peanut butter. Mix well until they form a mash or paste-like substance.

4. Spread the peanut butter and banana mixture over the crust. Then top with the reserved 2 1/2 cups of topping. At this point, I pressed the crumbles lightly to compact them.

5. Return the bars to the oven and bake for another 10-15 minutes.


With the risk of sounding like I am talking down about the recipe, I am going to mention the parts I would like to improve in hopes that someone might chime in and help. Let me first say though that they really did taste good. I just want to tweak the recipe to perfection by making them easier to cut and serve. The only real problems were that the bottoms were a bit too rigid, and were difficult to remove from the pan, even though I sprayed with cooking spray. Maybe I cooked them too long? Maybe they need more butter? Also, the top and bottom tended to separate at the peanut butter and banana layer. While it was easy to press it back together, I would love suggestions on how I might get them to bind a little better. Any ideas?

    Tried to contact you through the contact link, but couldn’t seem to. I came across your blog, and noticed you cooked with oatmeal quite a bit. Our oats are different from the regular rolled oats and can be used for baking unlike traditional steel cut oats. Please feel free to contact us further.

    The bars look like they taste delicious. Not sure how long the recipe cooled before; maybe if it cools longer it will be easier to take out. Also, maybe it could have been cooking to long? Maybe just using a metal spatula to really get them out :)
