Hey everybody, Susan over at The Great Balancing Act featured me as a guest blogger yesterday. I have been following her blog for a while now, and noticed that she has an expensive addiction to the chocolate Vitamuffins. So, I decided I would make my post a way to give her a little help with that… at least with the expensive part anyway.

I did a little searching for a good low-fat, low calorie chocolate muffin, but was not very thrilled with the results. Most recipes had too much fat (from using eggs and oils) or they had too much sugar. So, I decided to make up my own version, and I was very pleased with the outcome. In the end, they ended up working out to just 130 calories and 1.5g fat each. They are perfectly chocolately, and not too sweet. I have been enjoying them all week. :)
