Sloppy Joe Casserole

You know how sometimes, you just want a really quick and easy meal? I sometimes have to remind myself that every meal does not have to be a gourmet feast. Well, last night was one of those nights. I have been extremely busy with homework recently, and just did not feel like putting together anything complicated ( I am finishing up my last semester of Grad School right now).

What did I do for a quick, easy, cheap dinner? Enter the super simple, sloppy joe casserole. I have made similar dishes before and really enjoyed it. The Jiffy cornbread on top gives it a nice slightly sweet taste. Like I said, it’s not very gourmet (possibly not even all that photo friendly), but it sure tastes good. Aside from being very simple to put together, and extremely cheap, it is also pretty healthy (if you have some veggies on the side). This recipe probably makes about 8 decent sized servings, so when divided 8 ways, the fat/calorie counts are really not all that bad.

Sloppy Joe Casserole

INGREDIENTS

  • 1 lb. ground beef
  • 3 cups cooked rice
  • 15 1/2 oz. can sloppy joe sauce
  • 15 1/4 oz. can diced tomatoes
  • 2 cups frozen (or 15 1/4 oz. can drained) whole kernel corn
  • 1/2 cup sliced mushrooms
  • 1 tsp seasoned salt
  • 2 boxes Jiffy Cornbread Mix
  • 2/3 cup milk (I use fat free)
  • 2 large eggs
  • strong flavored cheese (optional)

METHOD
1. Brown the ground beef in a skillet. Mix in the rice, sauce, tomatoes, corn, mushrooms, and seasoned salt. Place the mixture in a 9×13 pan.

2. Bake in a 350° oven for about 10 minutes. After removing, top with cheese (if you decide to use any).

3. Combine the eggs, milk, and cornbread mix together and pour over top of the rice and beef mixture.

4. Bake for another 30 minutes, or until the cornbread is fully cooked.

    brian and i had liz over for dinner on friday night. liz had never had sloppy joes before in her life… “aaaahhh”
    so i looked up a good recipe and thought you would enjoy knowing about it. the recipe calls for 1 lb of ground beef and 1/2 lb of italian sausage, sauteed green peppers and garlic (onions are in the recipe but were left out for obvious reasons) and the sauce is made from a combination of chili sauce, worcestershire, and red wine vinegar. it had a great flavor and even a little kick. i found it on allrecipes.com (from my i phone)
