White Chocolate Blondies

While digging back through the archives of one of my favorite food blogs, Smitten Kitchen, I found a recipe for an extremely simple blonde brownie recipe. There are only 6 ingredients, meaning the prep time is maybe a matter of a couple minutes. I was craving something sweet, and had a bag of white chocolate swirl chips on hand, so I decided to make the blondies, with the addition of some white chocolate.

My Mom is an amazing cook/baker, and she loves to continually try new recipes, and tweak the ingredients here and there to make it her own. Hmmm, I wonder where I get that tendency. :) As I was growing up, we had a running joke around our house, that if we really liked something, we needed to write down the recipe, or make sure to really, really, let her know, because she almost never made the same thing twice. Well, the one recipe that she did make consistently, was her “famous” Chocolate Chip Blonde Brownies. Don’t worry, I’ll share it soon enough. :P

Edit: I first posted this saying that I thought they might be too fudgey for me. But, after they fully cooled, they were very good.

In the mean time, I will leave you with this quick and easy version of blondies. With only 7 ingredients, these were extremely easy, and can be whipped up in almost no time. Typically, I double brownie recipes and make them in a 9×13 pan, but these were extremely sweet, and I was glad I cut them in mini bite-size squares. This should easily please even the sweetest of sweet teeth.

White Chocolate Blondies

INGREDIENTS

  • 1 stick butter, melted
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • pinch salt
  • 1 cup all-purpose flour
  • 3/4 cup white chocolate chips

METHOD
1. Mix the butter and brown sugar in a bowl.
Seth’s tip: For fewer dirty dishes, melt the butter in a large enough bowl/sauce pan to later add all other ingredients, making this a one bowl cleanup.

2. Mix in the egg, vanilla extract, and salt. Before adding the egg, make sure the butter is not still hot from when it was melted. Warm is ok, but hot will start to cook the egg if it is not mixed in fast enough.

3. Add the flour, and continue to stir until fully incorporated.

4. Pour the batter into a greased 8″ pan and sprinkle with the white chocolate chips (I used white chocolate swirls). Bake at 350° for about 25 minutes, or until a toothpick inserted in the middle comes out clean.

    Oh goodness, that sounds really good. I have to admit that I’m a little confused as to the absence of white chocolate in your recipe though?

    Oops! Sorry, I totally forgot to add the white chocolate chips to the recipe. *Now edited* They do kind of look like peppermints don’t they? Those are holiday swirl, white chocolate chips.

    Those look so yummy! Even being a picky eater back in the day I ALWAYS loved your mom’s blonde brownies. I’ve definitely had a hankering for some sweets lately (building my extra layers for winter?) so thanks for reminding me of them. The white chocolate sounds like a great idea. I will have to try them out next week. :-)
