Cheesy Carrot Casserole

This dish is a quick, simple way to get even the pickiest eaters to try some nutritious carrots. I mean really, who can say no to butter and cheese. Sure, those ingredients make it a not-so-healthy dish, but you are still getting the nutrition of the carrots! Plus, it is always a crowd-pleaser.

We had a pot luck lunch at my work, and I was in a dilemma of what to bring. I have a stack of recipes on my desk at home just waiting to be tried, but I work with a lot of picky eaters who might not appreciate the amazing flavors of some of the healthier dishes I like to eat. The sign-up sheet was full of the traditional pot luck staples: baked beans, macaroni/potato salads (yes the super high fat versions from the grocery), and desserts, so I knew I wanted to bring something at least half-way nutritious.

Cheesy Carrot Casserole to the rescue! I love this stuff, because it is quick to prepare, super cheap, people tend to eat it up, and it still provides a vegetable.

Question of the Day: Does anybody else run into these types of quandaries in selecting dishes to take to pot lucks or other social gatherings? I find myself thinking these things a lot. What do I make? Can I make enough for everyone without spending a TON of money? I want to take something healthy, but will people eat it?

Cheesy Carrot Casserole

INGREDIENTS

  • 2 lb. carrots, sliced into coins
  • 6 Tbsp. butter or margarine
  • 6 oz. American cheese, cubed (we prefer Velveeta for this)
  • 1/4 – 1/2 tsp. dill weed
  • 1/2 cup crushed crackers (Saltines and Ritz varieties are good)

METHOD

1. Cut carrots into coins and cover with water in a medium sized pot. Bring to a boil and simmer for 10 minutes.

2. Drain and place in a 1/2 quart greased dish. Melt 4 Tbsp. of butter and cheese, stir in dill weed, and pour over the carrots, and mix to combine.

3. Melt the other 2 Tbsp. of butter and toss with the cracker crumbs. Sprinkle over the carrots, and bake at 350° for about 25-30 minutes or until light brown.

    Oh my…just the word “cheesy” caught my heart. I love this dish! Be assured that if I were a guest to that potluck, I would zoom in for this dish first!
    I’m not a fan of potlucks, either, esp since there is BOUND to be at least one person who don’t really like my dish…but oh well.

    Yeah, I really like this one. A simple twist is to use cauliflower instead. I guess you could really use any combination of veggies, and it would still be good. Just about anything with melted Velveeta would be a whole lotta yum.

    I dunno, I’m not so sure you are really missing out…
    Sometimes I enjoy them, but more often than not, I find myself disappointed by potlucks. The success completely depends on the participants. Most of the ones I have been to have people who want the simple, easy, no-cook stuff to bring. So, you almost always end up with the store bought potato salad, macaroni salad, baked beans, chips, etc. BUT, if you can get a group of friends together who actually like to cook… now THAT is a fun potluck!

    Oh, and you tease me about the processed food. HA! Seriously though, that is a great one for picky eaters. I mean really, who can say no to anything smothered in cheese?
