Juicy Meatloaf

How many of you complain about meatloaf being dry and lacking flavor? I can promise you won’t have that problem with this recipe! These loaves come out extremely juicy, and are certainly not lacking flavor in any way. In fact, you might even want to cut back a little on the syrup to make it a little less sweet. Yes, you did read that right… there is syrup in this meatloaf recipe.

I always loved my Mom’s meatloaf growing up, but when she found this recipe, we were quickly converted. Even aside from the excellent flavor, this recipe is extremely easy to make, and is pretty difficult to mess up. Like a soup, it is a “mix all ingredients and cook” type of recipe, which works well for anyone unsure of their kitchen abilities.

If you make this meatloaf, with some mashed potatoes and peas as side dishes, you will have a wonderful “comfort food” meal that is sure to please. This is a frequent repeat in our household, and I hope that you enjoy it as well.

Juicy Meatloaf

INGREDIENTS

  • 2 – 2 1/2 lbs. ground beef (or ground beef and pork combination)
  • 1 small onion, minced
  • 2 eggs, slightly beaten
  • 1 cup oatmeal (not instant)
  • 1/3 cup ketchup
  • 1/4 cup firmly packed brown sugar
  • 1/4 cup maple syrup
  • 3 Tbsp. Worcestershire sauce
  • 2 Tbsp. hot sauce
  • 4 slices bacon
  • 15 oz. can tomato sauce

METHOD

1. Mix all ingredients except the bacon and tomato sauce and shape into 2 9×4 inch loaf pans (or just 2 equal sized loaves).

2. Place the loaves on an aluminum-foil lined pans. The aluminum foil is not necessary, but helps with cleanup! Pour tomato sauce evenly over the loaves and arrange the bacon on top.

3. Bake at 350° for 1 hour. Let stand about 10 minutes before serving.

Yield: About 8-10 servings.

    Ok, woah… wait… are you saying you have never eaten meatloaf? Wow, you are missing out. Like I said, make this with some mashed potatoes and some peas, and you will be happy you did. A lot of people will also make dinner rolls to go with it.

    Leftover meatloaf can also be a thing of beauty. Many people love to make a sandwich out of it the next day. For me, this one is so juicy and sweet, I don’t even add any extra condiments when I make a leftover meatloaf sandwich.

    I think I have had it once or twice and liked it (at a deli we went to), but it was many moons ago! I was told that my dad hated meatloaf so my mom never made it … and what do you know, the one time I thought about making meatloaf, my husband informed me that he hates it too!

    Maybe I should just make it and freeze leftovers for my own enjoyment :) I love cabbage rolls, which is a similar idea I think (didn’t try those until a few years ago!).

    Meatloaf is sooo not my strong point. My mom made it growing up and it was delicious. I tried to make it last year it was like a giant loaf of nasty hamburger. Maybe if I try yours, my husband will actually eat it this time!
