Applesauce Topped Pork Loin Roast
With the way we divide our household chores, I am usually the one who does the cooking, but Abby is good in the kitchen, and likes to whip up a meal from time to time as well. This pork roast was her contribution one night when she took over.
I love a tiny bit of sweetness in most foods, even meats (bbq, meatloaf, chili), and the brown sugar and applesauce really topped off the pork roast nicely. In fact, the topping was so good, that if we make this again, I will probably double all ingredients except the pork, and pre-slice the roast prior to cooking. That way, I can get the rub and applesauce on all sides of the meat, instead of just the top and sides. That has always been one of my big complaints with meatloaf. I LOVE the tomatoey topping, but it is only on the top. So, when you slice it, you just get one little strip of it.
Even though I didn’t actually do any of the preparation on this one, I am pretty sure Abby would agree this recipe was very simple, and well worth giving a shot. If you are not as into sweetness in your meat, then you could easily leave out some of the brown sugar, and I am sure it would still be good.
Applesauce Topped Pork Loin Roast
INGREDIENTS
- 4 lb. pork loin roast
- 1/2 cup prepared applesauce (I used unsweetened)
- 1/4 cup packed brown sugar
- 1 tsp. vinegar
- 1/8 tsp. ground cloves
- 1 – 2 cloves garlic, cut into strips
- 1 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. sugar
- dash of pepper
- 1/2 tsp. prepared mustard
METHOD
1. Combine the applesauce, brown sugar, vinegar, and ground cloves, set aside.
2. Cut slits in top of the pork roast, and insert garlic strips.
3. Combine the flour, salt, sugar, pepper, and mustard, and rub over the roast.
4. Place roast in a shallow baking pan, and bake uncovered at 350° until the internal temperature reaches 160°.
5. Brush applesauce mixture over roast during the last half hour of baking.

Oh yummy! My brother made me dinner this weekend…pork shoulder roast cooked in the crock pot with sliced apples and applesauce. It was Amazing, so I immediately thought of making it myself, but with a pork loin to make it lower in calories. I just wasn’t sure if it would be as good. Now I think I’ll make this instead. The idea of the vinegar and mustard with the apples and brown sugar sounds fantastic.
