We had yet another pitch-in pot luck meal at work yesterday. In attempting to stay with the spririt of the season, I decided to give this recipe a shot. Of course, since we were at work, the Eggnog was made without the “nog”, but I’m sure you could easily add a splash of bourbon or two (or three) for use at home.

Despite the fact that there were no actual eggs used in the making of this drink, it tasted amazingly similar to every other version of eggnog I have ever had. I can hardly even express how simple and cheap this was to make! For ease of mixing, I used an empty gallon milk container to store and transport the eggnog. The spices tended to settle to the bottom fairly quickly, and having it in a gallon container made it simple to shake the container to mix them back in.

If you need an extremely simple drink to give your Christmas party that extra touch of Holiday cheer, I would recommend giving this recipe a try. I used skim milk, which made it a relatively low calorie alternative to its traditional cousin.

Easy Eggnog

INGREDIENTS

  • 1/2 gallon cold milk, divided
  • 3.4 oz. pkg. instant French Vanilla pudding mix
  • 1/4 cup sugar
  • 2 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg

METHOD

1. Whisk together 3/4 cup milk and the pudding mix until smooth.

2. Whisk in the sugar, vanilla, cinnamon, and nutmeg

3. Stir in the remaining milk and refrigerate until serving.
