Vanilla Pear French Toast

Remember this post where I showed you the delicious basket of pears Jessica sent me? As the last of them were starting to soften, I decided to incorporate them into a meal.

A few years ago, my sister told me about how her friend adds a splash of vanilla extract to her french toast. I tried it, and have been a convert ever since. I thought pears would be a nice addition, and I diced them and grilled them in the skillet along side the french toast. The light flavor of the pears was almost overshadowed by the rest of the dish, but I think they still provided a nice accompaniment. I could be wrong, but I think a hint of the pears blended into the french toast.

Breakfasts are really one of my favorite types of dishes to experiment with. Between oatmeal, eggs, and fruits with yogurt, there are so many additions and fixin’s that you can toss into the mix to make it almost a completely new experience every morning.

Vanilla Pear French Toast

INGREDIENTS

  • 2 pieces sliced bread
  • 2 eggs
  • 1 Tbsp. milk
  • 1-2 tsp. vanilla extract
  • 1/2 ripe pear, sliced into small cubes
  • sprinkle of powdered sugar, optional

METHOD

1. Beat the eggs with milk, and vanilla extract.

2. Dip bread in the mixture and toss onto a warm skillet.

3. Sprinkle the pears around the outside of the toast, and cook over medium heat.

4. When finished, top with powdered sugar (optional) and the grilled pears.
