Portabello Mushroom Burgers
For St. Patrick’s Day, most food bloggers are posting green brownies, cakes, and cookies. What is on my mind? Avocados! And the perfect “side” for some avocado… how about a portabello mushroom burger?
See the picture, there is green in the smashed avocado… so I’m safe, no pinching!!!
I love these because they literally take minutes to prepare, and are extremely healthy. Although, in addition to the big slice of swiss cheese, I added something else that made it a bit less healthy. Vegetarians hide your eyes… bacon! Yes, I took an entree that is typically thought of as a vegetarian “substitute” and added bacon to it. BUT, I loved every bite! With some avocado spread into the bun, and grilled onions, this meal really hit the spot.
Portabello Mushroom Burgers
INGREDIENTS
- large portabello mushroom caps
- 1-2 Tbsp. liquid smoke
- 2-3 Tbsp. teriyaki sauce
- 1-2 Tbsp. olive oil or butter (or enough to keep from sticking)
METHOD
1. Heat the oil or butter in a large skillet. Drizzle the sauces over the mushrooms while cooking. Over medium heat, cooking time may be about 2-3 minutes per side.
2. If desired, toss in some onion slices to grill while the mushroom caps cook.
