Cranberry and Flax Seed Scones

Last weekend, I was going to make up another batch of those Whole Wheat and Flax Seed Pancakes, but decided to see what else I could do with flax seed meal. Simple Fruit Salad

Isn’t it just amazing how much color that fresh fruits and vegetables can add to a meal? As we do every Sunday, my family got together for lunch, and fruit was to be my contribution this past weekend. I love fresh pineapple, but had never bought a whole one. The spiny exterior has always seemed a bit daunting, and the courage to try it has always eluded me… until now.

Pistachio Crusted Fish

For those of you who, like me, can stand in front of a bowl of pistachios for a good five minutes, just cracking them open and popping them down, this recipe may help to cure you of satisfy that craving.
