Creamy Chicken Stuffed Portabellos

“I’ve never met a mushroom I didn’t like”. That is my Dad’s favorite way to joke with us about his mushroom fascination. No, not the special ‘shroom variety, but hey… a nicely prepared mushroom can be just as magical.

Ok, I have a confession to make. As I was browsing the produce the other night, I came upon this great buy, and actually found myself saying “Oh, fun!” out loud. Yes, I know I’m a dork. It takes a rare breed of dork mixed with foodie …

Texas Burritos

When New Years Day comes around each year, the traditionalists break out the blackeyed peas recipes, and cook them up with a nice side of boiled cabbage. I made these Sweet ‘n’ Tangy Carrots for a Christmas potluck dinner recently. Unfortunately, you may see from the picture that I forgot to add the fresh parsley. Somehow, …

Caramelized Brussels Sprouts with Pistachios

For Thanksgiving this year, I was in charge of bringing the customary Brussels sprouts. Wow, there are lots of great recipes for ways to cook these delicious mini cabbages. I had a rough idea of what I wanted to do, but still bounced around through the cookbooks and online recipes until I found this recipe. This one made me change my mind, and I never looked back. I would say this is one of the best ways I have ever eaten Brussels sprouts. The combination …
