Simple Fruit Salad

Isn’t it just amazing how much color that fresh fruits and vegetables can add to a meal? As we do every Sunday, my family got together for lunch, and fruit was to be my contribution this past weekend. I love fresh pineapple, but had never bought a whole one. The spiny exterior has always seemed a bit daunting, and the courage to try it has always eluded me… until now.
Has anyone used one of those corers to get the pineapple started? I try to stay away …

Creamy Cauliflower Dip

Do you have preconceived notions about what a breakfast / lunch / dinner *should* be? As I was preparing dinner the other night, Abby asked what I was making. Wait, this post …

P.B. Curry Stir Fry

Going back to my review of P.B.Loco’s Asian Curry Spice Peanut Butter, I am thinking my conclusion may be correct. If you remember, I said that I think that particular flavor of peanut butter would be more suited to use in cooking than to eat by itself. Well, the other night, I put it to the test. I whipped up a quick stir fry, and made a sauce using the curry peanut butter. It turned out to be very good. I guess you could say …

White Cheddar Scalloped Potatoes

I went to see Avatar (in 3D) last night. I was truly amazed! Sure, the storyline is one that is slightly modified from previous movies, but in all truthfulness, there are only a finite number of plots, and all movies are just some adaptation of that limited number. I heard the number of different possible plots one time, but I don’t remember what it was (something in the 30’s I think).
I won’t give any spoilers about the movie, but I will just say that I enjoyed the …
