Black Bean and Shrimp Burritos

This is one of mine and Abby’s favorite go-to, low-fat recipes. We usually have the ingredients on hand, it is cheap, and it is really easy. They also freeze well. We will often wrap some of the leftover burritos in plastic wrap and place them in the freezer for a quick, ready-made meal later. Spaghetti with Browned Butter and Mizithra

For anyone who has ever been to the Old Spaghetti Factory restaurant chain, you may have seen this item on their menu (a la Homer). While not very calorie-friendly, this amazing dish is almost as easy to prepare as simply opening and heating a can/jar of pasta sauce. There are only 3 ingredients, and one of those is the pasta itself!

Lunch
We had some hors d’oeuvres while we waited for everyone to arrive.

Grapes and crackers to go with a cheese sampler. The dark cheese was a herkimer yellow cheddar, next was a parrano cheese, and finally a buttermilk blue. The parrano was recommended by a fellow shopper at Fresh Market, and it was good, but a little too mild in this setting. The strong flavor of the cheddar and the blue cheeses overpowered it and I think its taste was lost at their sides.

Breakfast
My family is getting together for a belated Birthday lunch for me, and I don’t want to spoil my appetite. I don’t want to be ravenous when I get there and not be able to enjoy the flavors, so I think I need a little snack. I decided a pear with a little melted havarti dill cheese sounded good.

For anyone that enjoys food pairings, apples and pears go GREAT with cheese!!! This was delicious.
