I started making some macaroni for dinner tonight, but then saw the big chunk of sourdough bread my Grandmother made and sent home with me, and the wheels started spinning.

I toasted the bread in the oven and topped it with some leftover pasta sauce and grilled eggplant from this weekend. I sprinkled a little shredded cheese on top and tossed it back under the broiler.

I ate another grilled jalapeño, some cucumber slices with a light ranch veggie dip, sugar free peach drink mix, and some banana pudding for dessert.
