Roasted Pumpkin Seeds

As you have seen in my last couple of posts, I have been busy playing with fresh pumpkins from the garden. So far, we have made cupcakes and pumpkin pie. I like to use fresh pumpkins as opposed to canned because of the taste and color… but most of all I like to roast the seeds!!!

We actually end up buying roasted pumpkin seeds throughout the year, but in the fall, we get to make them ourselves. The seeds (pepitas) are delicious and easy to prepare. You …

Fresh Pumpkin Pie

This weekend I made dinner for company. What sounded good to us? Pumpkin Pie! I had some turkey legs in the freezer and decided to go for an all out Thanksgiving dinner, even though it was Halloween Day (I guess I am just overly anxious for Thanksgiving).

Halloween Pumpkin Cupcakes

A quick word of caution to any picky, purist foodies out there… I cheated on these cupcakes! I love making things from scratch. I can control the ingredients (which also means the calories), and it is much cheaper than going with the boxed stuff or pre-made options.
